Off to Big Sky Country!

I know it’s been a few days since the glory of the chocolate covered bacon…I thought I’d let that resonate a bit. My dreams are still haunted by the salty sweet goodness, which I’m considering experimenting more with. It’s just so darn tasty! I actually begin to salivate when thinking about it….

The Pie

When I was pregnant with Rowan all I wanted to do was stuff Sour Patch Kids into my mouth by the hundreds. I do not joke. Donovan knew that every time he went to the store he’d better return with the “big” bag of SPK’s or there would be big trouble. I would sit at home, with my belly up to my chin, literally drooling with anticipation. It was not a pretty sight. Now, minus the uncontrollable urges of pregnancy, I can actually spend some time on a salty sweet delicacy. For example, finding myself with leftover caramel and chocolate after “The Pie”, I decided to make Salted Chocolate Caramels.

I spread the leftover caramel on some parchment paper (if you don’t have any parchment, I recommend getting some…stuff is more useful than flypaper in the summertime!) then covered it with the chocolate. Both participants, having been created as more of a drizzley sauce rather than something that would turn hard, needed to be stuck in the freezer.

Once they hardened up a bit, I cut the sheet of sweet into squares and rolled them between my palms to form balls, which promptly rendered them soft and mushy again. If I was smart and had more parchment I would have twisted them up into cute little packages, but I wasn’t and I didn’t. (Note to self: Buy more parchment paper.)

Now that they were (sort of) balls, I sprinkled them liberally with sea salt and popped them onto a plate and back into the freezer.

Now, they are very sticky and need to be pried off the plate with a fork, but ohhhhh! Such a sweet, salty delight to roll around on your tongue. It literally is a transcendental flavor experience. Next time, I will make caramel and chocolate of the appropriate consistency.

Anyhow….reason for this post is to let ya’ll know that me and the fam will be off to Big Sky Country (Montana) and not blogging for a few days. I will however, be Tweeting and Facebooking from the road (don’t fail me AT&T!), so if you’re into that kind of thing, I encourage you to check out my updates!


There will be lots of pictures: gorgeous scenery, road-tripping babies, wildlife (hopefully), and maybe even a peek at the parents! They are rather darling.

  1. If you expect cell phone service in the valley, you’re in for a disappointment. “Flathead” is actually a mistranslation of an old native word for “no bars”

  3. Okay, where are the rest of the caramels? I can’t find them…. also, you’re out of beer…. and what is that in the sink that keeps saying, “Hey! Commere’…” every time I walk past it? Have fun!!
